Yummy Recipe: Veggie Quesadilla
This delicious recipe is from Denise Austin’s “Daily Dozen” book. Denise Austin is a fitness expert who promotes healthy eating and active lifestyles.
1 tsp olive or canola oil
1 whole-wheat tortilla
1 cup packaged broccoli slaw (shredded broccoli and carrots)
1/2 cup thinly sliced onion
1/2 cup thinly sliced bell pepper
1/4 cup lowfat shredded Tasty Cheddar
1/4 cup salsa
2 Tbsp light sour cream
1. Heat oil in a skillet over medium heat. Place all the veggies on one side of the tortilla, top with cheese and gently fold in half.
2. Transfer filled tortilla to the skillet and cook for 2 to 3 minutes per side, pressing down with a spatula, until cheese is melted. Serve with salsa and sour cream.
Note: You can use Coleslaw in place of the broccoli slaw
